Avocado Egg Rolled Omelette

1 serving | 579 calories | 18.2g carbs, 48.6g fat, 24.6g protein

2 bacon strips, chopped

1/2 tbs butter, for cooking

2-3 eggs

curry powder

onion powder

garlic powder

cayenne pepper

black pepper


1 avocado, pitted and cubed

1 lime

cheddar cheese

Cook bacon in pan. Set aside. Drain fat from pan and wipe with paper towel. Add butter to pan to coat.

Whisk eggs and spices together in a bowl, add to pan and cook over med-low heat.

Add avocado and cheese, season avocado with salt and juice from 1/2 of the lime. Roll omelette when eggs are cooked and opaque.

Finish with remaining lime juice.

Flavor profile of this recipe is inspired by BJ’s Brewhouse Avocado Egg Rolls. For an even closer taste, add some chopped sun-dried tomatoes!
